Belgian Waffles

Ingredients
2 cups all-purpose flour
3/4 cup sugar
1/2 teaspoon salt
3 1/2 teaspoons baking powder

2 large eggs, separated
1 1/2 cups whole milk
1 cup butter, melted
1 1/2 teaspoons vanilla extract

These Belgian waffles are simple and tasty, soft on the inside with a light crunch on the outside. This sweet pastry serves as a delightful breakfast, snack, or dessert — just toss some whipped cream and strawberries on top. Be sure to cook these waffles until the edges are light to medium brown.

Step 1

Preheat waffle iron and grease with butter or vegetable oil spray.

Step 2

In a medium bowl, combine flour, sugar, salt, and baking powder. Set aside.

Step 3

Separate egg whites and yolks, placing both in small bowls. Set whites aside and beat yolks lightly.

Step 4

Add milk, butter, and vanilla to beaten yolks, then combine. Stir in yolk mixture to dry ingredients. (Will be slightly clumpy and the consistency of cake batter.)

Step 5

Whisk egg whites until stiff peaks form, then fold into batter. (The batter can be quite thick compared to standard waffle recipes.)

Step 6

Pour one cup of batter onto the preheated waffle iron. Bake until golden brown. Repeat until all batter is used.

Step 7

Garnish waffles with favorite topping, such as powdered sugar, strawberries, blueberries, or whipped cream.
